    Spotlight on Chef Pete Shaner, Waterloo's Award Winning Chef

    The ninth annual Beers to You and Gourmet Too event took culinary experience to another level. Held this past February in the Gallagher Bluedorn Performing Arts Center at the University of Northern Iowa, the event featured over 100 beers and food samples from over 40 local restaurants.

    Guests also learned valuable information on pairing drinks with food from keynote speaker “Dr.” Bill Sysak, a Craft Beer Ambassador and expert in food and drink pairings. Money raised during Beers to You and Gourmet Too was donated to the Friends of Gallagher Bluedorn and the Kaleidoscope Series for Youth.

    In addition to serving delicious food and drinks, Beers to You hosts competitions for local chefs and brewers. Taking home the win in the Best Beef competition was Chef Pete Shaner for his Sous Vide Steak Roulade. This is the second year in a row Chef Pete has competed and won.

    Chef Pete is Chef d’Cuisine, overseeing Otis & Henry’s® Steakhouse kitchen and is also the banquet chef at Isle Casino Waterloo. Born and raised in Waterloo, Iowa, Chef Pete knows what the locals want to eat: comfort foods! He tries to incorporate different ingredients into more familiar dishes to allow visitors an opportunity to try new foods.

    Fun Facts About Our Award-Winning Chef:

    Chef Pete got his start at Gary’s Catering in Waterloo. The chef/owner taught Chef Pete everything about working in a kitchen.
    Chef Pete isn’t a fan of working with octopus as it tends to be quite difficult to handle.
    The chef encourages his staff to be creative with ingredients, then he features the best dishes in weekly specials.
    Chef Pete enjoys challenges, especially preparing menus for large parties and special events.

    Visit Chef Pete at the Otis & Henry’s Steakhouse. Winner of the 2015 Open Table® Diners’ Choice Award, the steakhouse offers a selection of familiar favorites like perfectly cooked steak and baked potatoes with the fixings, as well as twists on classics like grilled caprese salad.

    All March long the steakhouse is featuring two delicious salads: the chicken bacon blue salad and the prime rib salad. The chicken bacon blue salad is a combination of juicy grilled chicken, crispy bacon, granny smith apple ribbons, and creamy Maytag blue cheese. The flavors hit all your taste buds, making it a satisfying dish.

    The prime rib salad is anything but ordinary: shaved prime rib atop a bed of fresh Arcadian greens with horseradish goat cheese for a creamy punch and teardrop tomatoes for a touch for sweetness. It’s for when you should have a salad, but you’re craving steak.
