Football Season is Here, Time for Tailgating!

Now that football season has begun, it’s time to think about tailgating in Waterloo. You’ll want to plan some delicious dips, snacks and other foods for your friends. At the same time, you don’t want to spend the entire time cooking instead of having fun! Here are four fabulous recipes that are easy to make, and taste fantastic.

This recipe is easy and filling, too. With only five ingredients and a crock pot, this dip is sure to become a favorite.

1 lb. ground hamburger, cooked and crumbled

1 lb. processed cheese spread, cubed

1 can (10-3/4 oz.) condensed cream of mushroom soup

3 c. frozen chopped broccoli, thawed

    2 Tbsp. salsa

Brown the hamburger and pour into crock pot. Add other ingredients and mix. Set the crock pot on low and cook for 2-3 hours until heated. Stir occasionally. Serve with chips or vegetables.

Make this delicious cheese ball ahead of time and freeze it. Thaw it overnight and you’re ready for a party.

2 8-oz. packages of cream cheese

    ½ c. butter

    ½ c. crumbled blue cheese

2-1/4 oz. of sliced black olives

2 Tbsp. chopped green onions or fresh chives

2/3 c. coarsely chopped toasted almonds

Combine cream cheese, butter and blue cheese after allowing to stand at room temperature for at least 30 minutes. Stir in olives and green onions. Cover and chill in the refrigerator for four hours or longer. Shape the mixture into two balls and chill again until ready to serve or freeze.

Make this chili the center of your tailgating party without a lot of prep work. It only takes 20 minutes to cook, which means you can spend more time having fun.

    1 lb. ground beef

    1 medium onion, chopped

2 to 3 tsp. of chili powder

    1 tsp. ground cumin

    1 tsp. salt

1 14-1/2 oz. can of Mexican stewed tomatoes

    1 16-oz. can chili beans

    1 c. frozen corn

    Shredded cheese

Cook the beef, onion and green pepper over medium heat until the meat is well-browned. Drain grease. Add the next six ingredients and allow to simmer covered for 20 minutes. Top with cheese when you’re ready to serve. You’ll need to double or triple this recipe if you plan to serve a larger group.

This recipe combines two tailgating favorites: burgers and pizza.

    8 oz. bulk Italian sausage

    8 oz. ground beef

    ½ c. pepperoni, chopped

    ¼ tsp. salt

8 ½-inch thick slices French bread or baguette

    1 8-oz. can pizza sauce

    ¼ c. shredded mozzarella cheese

    Pepperoni slices

Combine Italian sausage, ground beef, chopped pepperoni and salt in a large bowl. Mix well. Shape mixture into four patties. Grill over medium heat until done, turning once. Toast bread slices on the grill. Heat pizza sauce. Place burgers on bread topped with pizza sauce, cheese and pepperoni slices.

Try any or all of these recipes and you will be named master chef by all of your tailgating friends.
